I love haloumi and apples. Came across Sarah Wilson‘s recipe for ‘Salted Caramel’ Haloumi & Apples. So I made it for dinner one night. I also had half a brown onion to use up so made Caramelised Cacao & Balsamic Onions (recipe below). And then I topped everything with Yacon Walnuts (recipe underneath onion recipe).
Caramelised Cacao & Balsamic Onions
- Sliced onions
- 1/2 tsp raw cacao powder
- Splash of balsamic vinegar
- Dash of salt
Fry up the sliced onions in a pan with coconut oil / butter / ghee (whatever takes your fancy). Once it is translucent, add in the cacao powder and a bit of salt. Combine well. Add the splash of balsamic vinegar and continue to mix well in the pan until it starts to look caramelised. Remove from heat and serve with the Salted Caramel Haloumi & Apples.
- 2 tbsp walnuts, chopped
- 1.5 tsp yacon syrup
Combine the two ingredients and then sprinkle around or on top the Salted Haloumi & Apples.
This is quite filling… being full fat. Gives the feeling of satisfaction. Satiety.
