This was meant to be part of Meatless Monday, but I’ve decided I’m not doing Meatless Monday anymore as I don’t believe in going meatless. I don’t condone not eating meat, this is a good recipe to have as a side with meat. Or you can eat it without. Your choice.

What you’ll need
- 3 medium sized beetroots
- Oil of choice
- Red wine vinegar
- Cracked black pepper

- Walnuts (or pecans)
- Yacon Syrup

And now you can enjoy! Feel free to jazz it up with some lemon juice and an oil of choice. I liked it as is.
